Healthy Snack – Kale Chips

Kale Chips

Ingredients

1 bunch kale, no stems and tear into bite size pieces

1 tablespoon  coconut oil

½ teaspoon garlic salt powder (optional)

 

Directions

1, Preheat an oven to 350F (175C).  Line a non insulated cookie sheet with parchment paper.

2, Wash and thoroughly pat dry with paper towel.  In a large bowl, toss the leaves with a coconut oil and garlic salt.

3, Arrange leaves on baking sheets in a single layer (Making sure the leaves don’t overlap).

4, Bake until the edges brown but are not burnt, 10 to 15 minutes.

Slow Cooker Rouladen

Ingredients:

4 thin slices top round beef

Garlic salt and black pepper

4 teaspoons Dijon mustard

1 onion, sliced

1/4 stick butter

2 1/2 tablespoons all-purpose flour

1 can beef broth

1 carrot, cut into 1-inch pieces

2 stalks celery

Direction:

Season sliced beef with garlic salt and pepper.  Spread with about 1 teaspoon mustard; place sliced onion and celery.  roll up beef tightly; seal with a toothpick.

In a nonstick skillet, heat oil over medium-high heat; brown beef rolls on all sides.  Remove from skillet.

In a small skillet, melt butter. Stir in flour.  Stir in beef broth.  Cook and stir until mixture thickens.

Place beef rolls, onion, carrots, and celery in the slow cooker.

Pour broth mixture. Cover; cook on low 8 to 10 hours or on High 4 to 5 hours until beef and carrots are tender.

Cream Cheese Frosting

Ingredients:

1 stick unsalted butter, softened

1 (8-ounce) Cream cheese, softened

1 cup powdered sugar (if you like sweet taste, add more sugar.  But no more than 1 1/3 cups)

1 teaspoon vanilla extract

Direction:

In a large bowl, beat the cream cheese, butter and vanilla together until smooth.

Add sugar gradually and on low speed, beat until incorporated.  Increase the speed to High and mix until light and fluffy.

Use a pastry bag fitted with a star tip.

Squeeze out icing on the center of the cupcake.

Pipe a spiral of frosting, starting at the outer edge and working toward the center of the cupcake and covering the center icing, gradually piling the frosting into a peak.

Summer Pasta w/ Garlic Toast

A couple weeks ago, the temperature reached 115F here.  Since then, my A/C has been working day and night so I try to minimize cooking time.

Ingredients:

2 cups of Pasta (I used Penne this time)

1 roman tomato (you can use any kind of tomatoes)

1/2 cup of cucumber, thinly sliced

1 Tablespoon frozen corns (No need of thawing)

4 shrimps

1/4 cup of Italian dressing

Salt and pepper to taste

  1. Cook the pasta according to the package direction. Rinse Pasta with cold water. *Keep boiling water to cook shurimps.*  Just throw shrimps right into the pasta water.
  2. While the pasta/shrimps are finishing up chopping vegetable.
  3. In a large bowl, combine chopped vegetable, shrimps, frozen corns and cooked cold pasta with Italian dressing.  Add salt and pepper to taste.summerpasta02
  4.  Chill it in the refrigerator.

Garlic Toast

Ingredients:

1 slice of Texas Toast
1 Tablespoon butter
1 clove garlic, pasted
Parsley
Grated Parmesan cheese

  1. Make garlic paste with Oroshigane(Japanese Grater)  *You can use garlic presser or just finely chopped garlic*

       2.  Mix garlic past and butter

3.  Spread the mixture on the bread,  sprinkle chopped parsley & grated parmesan cheese.

4.  Broil until golden brown.

French Toast

It is hard to find Texas Toast in my local stores.   But recently 99 cent store opened in my area and I went there last night.  They have Texas Toast!!

French Toast (for 2 people)

1 egg

1 cup milk

1 tablespoon honey

3  slices Texas Toast

Maple syrup, Powder sugar, Cinnamon powder, Butter,

Optional — Frozen fruit (Blueberry & Raspberry)

1. Whisk together egg, milk, honey in a shallow baking dish large enough to hold bread slices in a single layer.

2. Soak bread slices each side until saturated.

3. Heat butter and vegetable oil in a skillet over medium heat.

4. Cook bread on each side until golden brown.

5. Sprinkle with powder sugar, cinnamon powder, fruits, and maple syrup.

6. Enjoy French Toast!!
