1/2 cup quinoa
1 cup water
1/8 red bell pepper
1/8 green bell pepper
1/2 cup grape tomatoes
1/2 stick celery
1 tablespoon red onion
1/2 tablespoon raisins
1/2 tablespoon dried cranberries
2 tablespoon lemon juice
1. Cook quinoa according to package directions or read “How to cook Quinoa“. Set aside to cool.
2. Chopped vegetables.
3. Combine quinoa, chopped vegetables, dried cranberries and raisins, and lemon juice; season with salt and pepper.
The other day I added the diced cucumber, apple, and cooked soy beans. You also can add your favorite diced vegetables.
